Today I’m here to show you how to decorate hibiscus cookies like the ones I added to the Luau Dessert Buffet last weekend. I have received many sweet comments about this cookie and I admit that it is also very special. There are many steps involved in the decorating process, but none of them are complicated and I think many of you will be able to make beautiful cookies.

First of all, I didn’t have a mugungwa cookie cutter… I made a four-leaf clover cookie cutter with tongues in the shape of a mugungwa! =)
Now you need to prepare the cookie dough (my recipe is here), let the dough cool well, then bake and cool.
Prepare the royal icing (here’s my recipe). You will need a bag (or bottle) of thick consistency icing and a thin (flood) consistency icing for each color.
Immediately fill the cookies with thick/flood consistency icing (should be about the consistency of shampoo or corn syrup).

Fill the cookies with frosting consistency. Use a toothpick to apply the icing to the unfilled areas.
Create a star shape in the center of the cookies, using Flood Consistency Icing in a contrasting color.
Poke a toothpick from the center of the cookie outwards (but not to the edges).
Now the icing needs to dry for a few hours or overnight before this next step. This is because after a few steps we will add some petals to the stamens (the part that protrudes from the center of the flower). If the base coat isn’t dry, the sprinkles will stick to the entire cookie, not just the stems they belong to. If you’re really pressed for time or just impatient, you can let the cookies dry for an hour or so and then continue with the surgery, but don’t spill anything on the surgery.

Note: The central part of the anther actually consists of the stigma and the stamens, but I will use the term stamens only for convenience.
When the base icing on the cookies is dry (or almost dry if you don’t add sprinkles) attach a line of thin permanent icing (using a #2 tip) to form the stems (see photo below).
Add some frosting to the top of the stamens with the same icing, then pipe some small dots around the tip as shown. I also added a white dot to the thick end of the stamens (optional).
Place the cookies on a paper plate while the lines and dots are still wet (for more grip) and sprinkle yellow non-pearl sprinkles on top of the stems.
