This is because brands that imitate vanilla extract, use artificial or synthetic ingredients, or reduce the amount of real vanilla in each bottle. You’re not paying for good vanilla, you’re paying for the convenience of packaged vanilla.
(Incidentally, last year I was part of a taste test of various store-bought pure vanilla, and McCormick got the hands down. It was the top of the bunch, both for taste and aroma.)
The Bummer Truth About Homemade Vanilla Extract
If you open a bottle of store-bought vanilla extract and homemade vanilla, you will immediately feel the difference. And that difference translates directly to your homegrown products.
All you do is pour vodka over the vanilla beans and let the mixture age over time. Shake occasionally.
Vanilla beans are expensive, but 5-6 of them (1/2 ounce or 15 grams total) make one batch (8 ounces) of vanilla extract, and you can reuse the beans. Compare that to $4 for 1 ounce of store-bought.
A non-alcoholic version? Pure extract is extracted from alcohol because it is the easiest way to extract flavor from food. I haven’t tried making the non-alcoholic version of vanilla extract, but there are a few tutorials online if you do a quick search.
Homemade Vanilla Extract (2 Ingredients)
Most vanilla extract you buy is called single-serve. Single-serve vanilla is weak, so making your own requires 4 vanilla beans per 8 ounces of vodka. I wanted a stronger vanilla, so the flavor of the house was more pronounced on the dessert. Strong vanilla is called double compound and is very expensive because it requires a lot of vanilla beans. A double batch is expensive, so I use 5-6 vanilla beans (1/2 ounce total) for every 8 ounces of vodka. This is the best balance of taste and price.
The only things to keep in mind with homemade vanilla extract are measurements and timing. The ratio of vanilla beans per ounce of alcohol is important, but so is the length of time it takes to infuse the vanilla beans. Now that we’ve talked about the portions above, let’s talk about how long it takes to infuse the vanilla. The vanilla extract is bitter and darkens the longer it sits. That means we need to be patient, and luckily I have an almost 2-year-old patient in my back pocket. However, it is worth waiting. Take some today and use it in six months. You will be happier as the year goes by. 12+ months Homemade vanilla is amazing!!
